Tasty Tuesday

I've also realized I haven't posted any recipes lately. I'm glad no one is dependent on my great recipes to survive one day on a meal. In honor of fall, and a recent chicken stew I just went to, today's recipe is a chicken pie. Everyone has their opinion on what a chicken pie consists of. In my mind...and the right way, may I add...is chicken pie is just chicken and broth; chicken pot pie is chicken, vegetables, and broth. I do not like chicken pot pie. I don't mind vegetables on the side with my chicken pie...but not in it. I love the taste of the chicken and gravy/broth mixture with a wonderful crust. Please leave the veggies OUT of the pie. By the way, I had been searching for a perfect blend of flavors for my chicken pie. I didn't want it too dry or too runny and I wanted to be able to taste the chicken. But I'm no chef and I have a full time job and kids, so I also need EASY. Finally after searching a church cook book that I had sitting in my bookcase for I don't know how long I found one I could work with!!

Chicken Pie
1 chicken, cut up (I usually buy the value pack of cut up chicken at Walmart, usually around $5)
1 can Cream of Chicken
Milk
2 pre-made crust in the pans
2 rolled pie crusts found in the can biscuit area

Boil chicken until meat is done and falling off bone. Allow to cool. Pull off bone and shred (we just pull it apart in a bite size peices). Salt and pepper to taste. Add the can of Cream of Chicken. Fill can with milk and add to chicken and soup. Mix well. Split mixture into the two pans with crust. Roll out can crust and fit on top of pie. Cut off excess dough and pinch crust. Poke top of crust with fork to allow steam to come out and prevent boil over. Bake at 375 about 30-45 min or until crust is browning but not burnt. Allow to sit for at least 10 minutes.


I love how this recipe makes enough for 2 pies. I have tried making one in a deep pie dish and it was too much chicken for the pie. I usually cook one and freeze one. I think I will have a chicken pie making day and make a lot for our family. It is so nice just having to pull one out of the freezer and pop it straight into the oven, especially on a cold winter day.
